Autumn Wild Rice Salad

Ingredients for Salad
1 cup wild rice, uncooked
1 cup brown rice, uncooked
1 cup currants
1 cup apricots, chopped
4 tablespoons chopped cilantro
4 tablespoons chopped parsley
1 shallot, finally diced
2 tablespoons grated orange zest
1/2 cup toasted slivered almonds
Ingredients for the Dressing
1/4 cup red wine vinegar
1/4 cup orange juice concentrate
1 tablespoon. Dijon mustard.
1 1/2 cups olive oil
S/P to taste
Directions
Prepare rice according to package directions. Combine with all other ingredients.
To make the dressing combine the red wine vinegar and orange juice concentrate along with the Dijon mustard slowly drizzle in the olive oil. Feel free to add additional currants, apricots, cilantro, parsley that you like. The amounts listed above are just starting points.
